Herb-Packed Cannabutter Hummus

Prep Time: 10 minutes

Yield: 4-6 servings

Ingredients:

  • 1 can (15 ounces) of chickpeas, drained and rinsed
  • 1/4 cup of fresh lemon juice (about 1 large lemon)
  • 1/4 cup of well-stirred tahini
  • 1 small garlic clove, minced
  • 2 tablespoons cannabutter, melted
  • 1/2 teaspoon ground cumin
  • 2 to 3 tablespoons water, or as needed for consistency
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh coriander, chopped
  • Salt to taste

Instructions:

  1. Blend the Base: In your food processor or blender, combine the tahini and lemon juice and process for 1 minute. Scrape the sides and process for another 30 seconds. This extra step ensures a smooth and creamy base, which will give your hummus that perfect texture.
  2. Add the Flavor: To the lemon-tahini mixture, add the minced garlic, melted cannabutter, ground cumin, and a pinch of salt. Blend for another 30 seconds. The cannabutter not only infuses the hummus with a gentle buzz but also brings a rich flavor that melds beautifully with the other ingredients.
  3. Chickpeas Time: Add half of the chickpeas to your food processor and blend for 1 minute. Scrape sides and add the remaining chickpeas, blending until thick and smooth.
  4. Find the Perfect Consistency: If your hummus is too thick or still has tiny bits in it, with the food processor turned on, slowly add 2 to 3 tablespoons of water until the consistency is perfect.
  5. Herb Magic: Once your hummus is smooth, add in the chopped parsley and coriander giving the hummus a few pulses just to mix the herbs throughout the spread without turning it completely green.
  6. Taste and Adjust: Sample your hummus and adjust the seasoning (salt or more cannabutter) to your liking.
  7. Serve and Store: Transfer the hummus to a serving bowl. You can store it covered in the refrigerator for up to one week.
